Profile

Dr. Mai Abdulkarem Khatib graduated with honors from the Clinical Nutrition Department, Faculty of Applied Medical Science, at King Abdulaziz University, where she was subsequently employed as an academic demonstrator and was granted a fellowship to complete her postgraduate studies. Dr. Khatib completed her MSc degree with distinction at the University College London, and her PhD degree at the Imperial College London, United Kingdom. She currently works at the Clinical Nutrition Department as an assistant professor and a researcher in the field of adult obesity and its comorbidities, and as a clinical dietitian in the nutrition clinic at the KAU medical services centre - female section.

Research Interests

Dr. Khatib's research interests include the study of obesity, and factors contributing to it among adults. Her previous work has included the study of the effect of structural foods and starch metabolism on appetite response and weight loss as a way to develop functional foods to combat obesity and diabetes. In addition, she is interested in gut microbiota, fermentation and short-chain fatty acids production and their related physiological effects. One of the interests as well is to study about gut health and the effect of functional foods on GI hormones and physiology.

Scientific interests

Dr. Mai Khatib is interested in learning what is new in the science of human nutrition, including nutritional management of chronic diseases, as well as the latest in research methods in health sciences. She is eager to learn new findings with regards to public health and effective strategies for disease management at the population level.
